Ayla is a washing station located in Bombe, within the Bensa district of Ethiopia’s Sidama region. Owned by Testi Specialty Coffee, the station was named by founder Faysel Abdosh after his niece—Ayla, meaning “grace” or “moonlight” in Turkish.
This lot was produced by around 900 independent smallholder farmers whose farms sit between 1,950 and 2,150 metres above sea level. The region’s high elevation and cool temperatures allow the cherries to ripen slowly, producing dense beans with exceptional sweetness and complexity.
Carefully selected cherries were pulped within hours of harvest, fermented in clean water and graded several times before being slowly dried on raised beds. The result is a floral and transparent coffee, with bright fruit acidity, delicate sweetness and a beautifully structured finish.
We roast on every Monday and dispatch on Tuesday.
