Mundayo is produced at the Mundayo Washing Station in West Arsi, Ethiopia, where around 750 smallholder farmers deliver carefully hand-picked cherries from the surrounding highlands. The station is operated by Testi Specialty Coffee, whose focus on careful processing consistently produces clean and expressive Ethiopian coffees.
Only fully ripe cherries are selected before being slowly dried on raised African beds. This patient natural process develops sweetness and vibrant fruit character while preserving the clarity and elegance that make Ethiopian coffees so distinctive.
We selected Mundayo because it showcases the beauty of a clean Ethiopian natural. Rather than being loud or overly fermented, it offers layered sweetness, ripe stone fruit and citrus-like fruit notes, balanced by a refined black tea finish. A sweet, elegant and beautifully structured cup that remains vibrant from the first sip to the last.
We roast on every Monday and dispatch on Tuesday.
